Mango Monday: Mango Paloma

Happy Mango Monday, everyone! I hope you're all reading this after enjoying one last Summer hurrah, a nice long weekend filled with sunny skies and ice cold drinks!

Before you head back to work and all other daily routines, though, how about having one more happy hour? As long as we've still got 90+ degree weather (which is definitely the case where I live), we can still enjoy a refreshing beverage or two. Have a Razz-Apple Champagne Slushie, or serve up a pitcher of Isla Sangria!  

Or, better yet, mix up this tropical take on the Paloma. This tequila cocktail has ginger ale, fresh lime, and sweet mango juice. It was made for easy-drinking, meant to be sipped while kicking back and relaxing. (Think sparkling margarita!) Summertime never has to end!





To make this cocktail, tequila, mango juice, limes, and ginger ale are all that you need.

For garnish, my sister brought over corn and fruits for our trip to the lake this weekend, so I thought that one of the leftover nectarines would match up nicely. I was also finally able to pick some calamansi from our tree, so I used those in place of regular limes.


Originally, the Mexican Paloma was made with grapefruit soda, so my plan was to find a mango soda, like Jarritos. However, I had plenty of mango juice and ginger ale on hand already, and it was hard to ignore the idea of using those instead. (I didn't have to run to the store for anything!) Fresh mango puree and ginger ale would also be an ideal substitute!


The final product ended up being a perfect combination of sweet and sour! The mango gave the drink a bright island twist. For freshness, the floral, tart flavor of the calamansi balanced everything out. Both ingredients blended well with the tequila.

So, before the chilly weather and rainy days take over, imagine yourself poolside or sitting out on the deck just a few more times...a Mango Paloma in hand!  



Mango Paloma

Print Recipe
Ingredients:
1 part Tequila
2 parts Mango Juice
1/2 part Freshly Squeezed Lime Juice
Ginger Ale
Diced Mango, for garnish
Lime Wedges, for garnish
  1. In a highball glass filled with ice, combine the tequila, mango juice, and lime juice.
  2. Top off with ginger ale, and garnish with mango and lime.
  3. Serve and enjoy!
