Egg Sandwich with Balsamic-Roasted Tomatoes & Fresh Mozzarella

I know what you're thinking: Who needs a recipe for a sandwich?? Well, I'll tell you...The kind of person that wants balsamic-roasted tomatoes and buttery scrambled eggs on their sandwich. That's who!

Fact: I could eat an egg sandwich for any meal, at any time of the day. It's a convenient, hand-held meal that never gets old. Back in high school, I used to just toast up some bread then throw on the scrambled eggs and a load of sriracha. (Literally, I would throw them on. I was usually running late for class...) I'm totally a grown up now, though...*lifts chin, straightens posture*...so, these days, I like to take my time and get fancy when making my sandwiches.

Like this morning...I woke up and went straight out the door for an appointment. I didn't even leave myself enough time to make coffee. The worst. By the time I got home, I was starving. I mean, I'm-so-hungry-that-I-will-eat-this-cheese-straight-out-of-the-package-with-absolutely-nothing-else starving...The easy fix??? An egg sandwich with balsamic-roasted tomatoes and fresh mozzarella!

Disneyland: Cafe Orleans

A few days ago, I posted my first review from my family's Disneyland trip. Then...I left you all hanging. I got lost in the mayhem of the last 5 days, which included fun times in a Bangkok Suite, volunteering in Jon's kindergarten class, and receiving a pretty awesome gift in the mail. Luckily, that just means I have some exciting things to share with you all in the near future! But, first things first, let's go back to Disneyland! Think of it as a nice little mental vacation in the middle of the work week...

Our next destination is Cafe Orleans, located in the park's New Orleans Square. I've skimmed over it in past Disneyland recaps, but I love this restaurant so much that it deserves its own dedicated post. (There will probably be another one when I visit during the holidays...) My first meal here was in 2007 with my parents. We made reservations for a table outside, with a view of the Rivers of America. Patrons can watch the Mark Twain Riverboat and Sailing Ship Columbia go by, hear the music of the pirate band, or just do some good ol' people watching. Now, whenever my family and I play tour guide/host to visiting friends and relatives, Cafe Orleans is the centerpiece of our dining experiences.

Green Goddess Chicken Sandwich

What's on the agenda for today? I have the house to myself, and there's late-afternoon baseball. The weekend is almost here, my couch is open and calling, the tv is free...all that's missing is a nice, hearty sandwich to dig into. (We all deserve a Lazy Day every once in awhile, don't we?...) 

This Green Goddess Chicken Sandwich was pretty fun to throw together, one of my more interesting concoctions. It's a random mix of farmers market buys...sunflower greens, herbs, and strawberries...but they come together to make an easy, tasty lunch.

Bread? Good. Meat? Good. Strawberries and Green Goddess dressing? Gooooood! (Said in my best Joey Tribbiani voice.)

Teriyaki Chicken & Mac Salad Sliders

Baseball season has officially begun, and the Giants home opener is so close...just 24 hours before Duane Kuiper announces, "We've got baseball here at 3rd & King.", and Renel welcomes "YOUR World Champion San Francisco Giaaaants!" as they take the field. This weekend, fans at AT&T Park will get to see another championship banner raised, Buster Posey MVP bobbleheads, another World Series Ring Ceremony...

But, unfortunately, I'll have to watch all of  this at home, from my front row seats in front of the TV...

Live-tweeting shenanigans and standing ovations in my living room will have to suffice for now. And, of course, this means that I'll have to come up with my own gameday grub while I'm watching from home. I thought about making Crazy Crab Crostini this weekend, but I ultimately decided on coming up with something entirely new.

Teriyaki Chicken & Macaroni Salad. Sliders.

Yes, teriyaki chicken and macaroni salad. All on a sweet Hawaiian roll. This is basically a plate lunch. (Remember the ones I had after kayaking in Hanalei? Or the ones from Eat the Street?) However, no forks, spoons, or knives required. Now, what does a Hawaiian plate lunch have to do with baseball or the Giants, you ask? Well...nothing...but these are delicious and convenient! You can have a slider in one hand and an ice cold beer (or Hawaiian Sun) in the other while cheering on the team, whether that's from your couch or while tailgating at the stadium. Here's how to make these tasty sliders!
